All our grapes now safely in tank, which is a very satisfying feeling! But the work doesn’t stop there. Luckily, we have the talented team at Halfpenny Green looking after our wines; once the primary fermentation has finished and all our juice has turned into wine, the tanks will be racked to remove the fermentation lees (solids that will drop in the tank). They will then stay here maturing in stainless steel tanks over the Winter.
At this stage, most of our wines will go through a secondary fermentation called Malolactic fermentation (or MLF for short!). This helps to soften our sometimes full on English acidity into something softer and more palatable. Depending on temperatures over winter, this can take several months!
Which will led us nicely into some blending sessions early next year where we can really get a feeling of how the wines are coming along. All being well, we will look to release a selection of our still wines around Spring 2023!
